Corned Beef and White Rice Recipe [with Video]
This is about Corned Beef and White Rice recipe for family dinner night.
Growing up in a large family we have few family staples. My parents didn’t have much money so our meals were always simple yet delicious. One of our family staples was rice and beans, but honestly I don’t think you can go to a hispanic family’s home without having rice and beans. The other is white rice and corned beef. I used to love eating that when my mom would cook it. It’s a super simple and tasty meal that fed the 10 of us and is ready in about 30-45 minutes.
My parents are no longer with me but when I make this meal for my husband and kids it reminds me of them and my siblings. We all make this just like our Mom used to, now I’m sharing this recipe with you.
Ingredients
Corned Beef
- 1 Can of Corn Beef
- 1 medium potato cubed
- 1 packet of sazon seasoning with achiote
- 1 8oz can of tomatoe sauce
- onion powder
- garlic powder (or 2 cloves)
- 1/2tsp oil
- 2tbsp of sofrito (bought or homemade)
- 1/2 cup of water
- adobo (to taste)
White Rice
- 2 cups of white rice
- 4 cups of water
- salt to taste
- 1 tbsp of oil
Directions
Corned Beef
In a medium sauce pan add your corned beef and all ingredients and mix. Cook on medium/low for 15 minutes stirring occasionally. Cover and simmer for another 10 minutes on low heat setting.
Serve with white rice or pasta. My siblings loved the pasta shells but I prefer rice.
White Rice
Cook desired amount of rice in a rice cooker or saucepan.
For 4 servings I use 2 cups rice and 4 cups water. Add salt and oil to water and bring to a rapid boil. Add rice and stir. Bring back to a boil. Once rice is drying (about 3-5 minutes) cover with a tight lid and turn heat low. Cook for 20 minutes. Do not lift lid during cooking time. After 20 minutes, stir rice and continue cooking on low heat for another 10 minutes. Rice is done when you taste it and it’s soft. Please be careful when tasting rice it will be super HOT!
That’s it the rice and corned beef is ready. I have to be honest with you, I have seen many variations of this recipe online but this is how I grew up making and eating this recipe. It may not be the norm but it tastes great and is easy.
